The role
Crown is the ultimate destination for dining experiences, with a vast array of casual offerings to more premium settings. We have something to suit everyone’s tastes.

We’re seeking an enthusiastic and dedicated individual to join the Culinary Team as the Chef de Cuisine looking after our Premium Italian Restaurant – Modo Mio.

In this full-time role you will oversee operations for a highly popular and well-known restaurant here at Crown Perth. In this hands-on role, your creativity and passion for food will be channelled into creating an exceptional dining experience for guests and customers. Reporting to the Culinary Director, you will be required to train and mentor your teams while liaising with a wide range of stakeholders, including senior-level management. Your advanced time management, organisational and task delegation skills will ensure an efficient daily kitchen operation.

In this role, you’ll provide joyful experiences through your genuine care for guests. As well as:

  • Create modern menus and outstanding premium dishes
  • Set a leading example and inspire a team of kitchen professionals
  • Oversee financial figures, headcount and overall operations of the kitchens
  • Ensure effective outlet management and efficiencies within the operation
  • Coach, guide and mentor team members
  • Adhere to all Crown safety policies and procedures
  • Ensure the restaurant produces high quality standards on a consistent basis
  • Successfully delegate tasks to capable staff members

 

 

    Job Description

    About you
    You’ll bring the following:

    • Key knowledge of Italian cuisine and authentic Italian ingredients and cooking techniques
    • Experience in a Chef De Cuisine role managing successful daily operations
    • Ability to manage budget to reach profitability targets
    • High level understanding of food safety standards and HACCP
    • Experience in a premium dinning setting with exposure to high demanding expectations
    • Strong organisational and communication skills to manage a high functioning team and rosters
    • Passion for Culinary experiences to be exceptional and unforgettable 

    Qualifications

    Certificate 3 & 4 Commercial Cookery
